Our People

The Team

The people who make Greer Southern Table what it is.

Greer Fredericks — green chalkboard wall

Greer Fredericks

Owner

Greer Fredericks has spent the past 40 years honing her skills, style, creativity and passion for creating the perfect "moment" in the music, epicurean and entertainment industries. Her enthusiasm stems from a life well lived and world travels which continue to fuel her hunger to experience just about anything, and she has. Whether managing VIPs for The Rolling Stones or planning a child's elaborate birthday party, Greer takes her energy, know-how and access into every endeavor. For the past dozen years, Greer has been the co-owner and managing director of three South Norwalk, CT award-winning restaurants: Peaches Southern Pub & Juke Joint, Mama's Boy Southern Table & Refuge and Jax & Co Low Country Kitchen. Additionally, in the Fall of 2020, Greer and partners were set to open Peaches Low Country Kitchen in the Financial District of NYC, which was placed on pause due to the global pandemic. Greer has worked for celebrity chefs Waldy Malouf as well as Todd English's personal management team. Her days as an event planner for Waldy at his award-winning Beacon Restaurant landed her a job at the famed Windows On The World in the World Trade Center in NYC, working under co-owner Jennie Emil. Besides the Rolling Stones, Greer has also worked with Mariah Carey, Stevie Wonder, Prince, Jessica Simpson, Eddie Money, Willie Nelson and Carly Simon, to name a few — seemingly to always circle back to her first love: food. Greer has lived on both coasts of the United States as well as Florida, and three years in Tokyo, Japan. She lives in Connecticut with her husband Tup, son Jax and their family cats, Pudge and Bo.

Juan Gallego — green chalkboard wall

Juan Gallego

Bar Manager / Assistant Floor Manager

Juan runs the bar and helps run the floor — which on a full Saturday means holding two rooms at once. He makes a classic cocktail properly, without shortcuts or flourishes it doesn't need, and he leads the way good managers do: by being the steadiest person on the shift. Much of what runs smoothly here runs smoothly because of him.

Alex Ruiz — green chalkboard wall

Alex Ruiz

Dining Room Manager / Guest Services

Alex has been with the company, on and off, for thirteen years — long enough that we stopped calling him staff a while ago. He runs the dining room with an easy warmth and a genuine refusal to be defeated by any request, however particular. He is also, by some distance, the best-dressed person in the building.

Anthony Rodriguez — in the kitchen

Anthony Rodriguez

Kitchen Manager

Anthony runs the kitchen, which means he sets the tone for everything that leaves it — focused, steady, and unwilling to send out a plate that isn't right. Outside it he's just as driven: he loves horses, trains hard, and is working toward a farm of his own in Colombia. The discipline that will get him there is the same one you taste at the table.

Jess Hopkins — private dining room

Jess Hopkins

Private Dining & Catering

Jess plans every private dinner and event at Greer Southern Table — and every Simply Greer Gatherings booking besides. An art school graduate, she sets a table the way other people paint. She lives in Norwalk with her husband, their two daughters and two mischievous cats. On a packed Saturday, she is the calmest person in the room.

Hosting somewhere other than here? Jess handles that too.

Simply Greer Gatherings

Private dining and events are run with Simply Greer Gatherings.
